Birthday donuts are a big deal in our family. My husband’s family started this tradition when he and his siblings were young, and it made such an impact on him that we have continued the tradition into our little family.
We used to take a trip to the local bakery and pick out our favorite donuts on our birthday mornings. But when we found out about our daughter’s allergies, bakery donuts went out the window. Over the past two years, I have been trying to figure out how to make gluten, dairy, and egg free donuts taste good.
And I must say – these chocolate, chocolate chip cake donuts taste delicious! And with the chocolate chips baked in, they truly don’t even need any sort of glaze or frosting! (Plus they’re less messy this way with a two year old!) Of course, as with almost all gluten free baking, these donuts are a little more dense than your traditional cake donuts, but nonetheless, each bite is a chocolatey delight!
INGREDIENTS
- 1 1/4 cup gluten free flour (1:1 flour blend)
- 1/3 cup cocoa powder
- 1/3 cup granulated sugar
- 1 teaspoon baking soda
- 2 teaspoons cream of tartar
- 1/2 teaspoon salt
- 1 tablespoon vanilla extract
- 1/4 cup coconut oil melted – about 20 seconds in the microwave (or vegetable or canola oil)
- 3/4 cup oat milk (or other non-dairy milk)
- 1/4 cup mini chocolate chips (Enjoy Life brand is our favorite!)
DIRECTIONS
- Preheat the oven to 375 degrees.
- Place flour, cocoa powder, sugar, baking soda, cream of tartar, and salt in a large bowl. Whisk together thoroughly.
- Add in vanilla, coconut oil, and milk. Stir until well incorporated. Donut batter will be very thick.
- Stir in chocolate chips until evenly distributed in batter.
- Spoon batter into a pastry bag (or a gallon zip lock bag – and use a scissors to snip off the corner of the bag).
- Pipe the batter into a greased donut pan. This recipe makes 6 donuts. (Because the batter will be thick, and gluten free flour doesn’t rise the same as traditional flour, fill the donut cups to the top.)
- Place the pan in the oven and bake for approximately 12-14 minutes, until the donuts spring back after touched by your finger. (If you like mini donuts, follow the same instructions, and bake for approximately 9 minutes.)
- Cool on a wire rack.
- Let them eat cake [donuts]!
