Pizza Night!! With allergies, it can be HARD to find a good tasting (and decently priced) pizza crust. But even when you think you find one, most gluten free pizza crusts still have ingredients like egg, dairy, or corn. This quinoa pizza crust is a delicious alternative to any store bought or restaurant pizza crust, and it is allergy safe!
This crust takes a little advanced preparation because you have to soak the quinoa for 6-8 hours, but I can tell you that it’s worth it! TIP: put the quinoa in a bowl to soak before you leave for work in the morning, or while you’re preparing your breakfast, and it will be ready for you to start making the crust that evening.
Next time you’re thinking pizza sounds good, stay in and make pizza with all of your favorite toppings – and with your favorite people! Make it a family event – spread out a sheet on the living room floor, put on a funny movie, and have a pizza picnic!
INGREDIENTS
- 1 cup dry quinoa
- 1/4 cup water
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon white vinegar (for corn free, check the source of the vinegar, or sub 1:1 with cream of tartar)
DIRECTIONS
- Soak quinoa in a covered bowl filled with water for 6 – 8 hours.
- When you’re ready to start the crust, Preheat the oven to 425 degrees.
- Strain and rinse the quinoa.
- In a food processor, blend the quinoa, water, salt, baking soda, and vinegar until smooth. (3-5 minutes)
- Pour the mixture into a pizza pan and spread evenly (we use a deep dish pizza pan even though this ends up as more of a thin crust – it contains the mixture well and gives it a good shape!).
- Bake at 425 for 20 minutes.
- Flip the crust and bake for an additional 10 minutes.
- Flip back to the first side. Add desired toppings, and bake for 5-7 minutes, until cheese is melted. (Watch your toppings for potential allergens – we use an organic tomato based pizza sauce, Daiya vegan mozzarella and pepper jack cheese shreds, and natural pepperoni.)
- Remove from the oven, let sit 5 minutes.
- Remove from the pan, slice, and serve!

Ah, thank you! Yes, most white vinegars are made from corn, however there are a couple corn-free brands. To be more safe and not assume others know about this, I will edit my post to use Cream of Tartar instead!
A couple alternatives:
1. Use Apple Cider Vinegar instead
2. Use Cream of Tartar instead (ratio is one part baking soda to two parts cream of tartar)
