Roasted Spaghetti Squash

Growing up, I felt like we had spaghetti every week. I get it, it’s a great meal for a large family – filling and not too expensive – but there came a point in time where I got super sick of spaghetti night (sorry, mom!). The funny thing is, my husband would tell you the same thing about his childhood! Too much spaghetti!

Still to this day, I don’t have spaghetti very often, but I now actually like to eat it since I don’t have it every week! But when someone first told me about spaghetti squash as a way to mix it up, I was super skeptical. I thought there was no way it would taste anything like spaghetti.

Now, the squash has a little different taste and texture than traditional spaghetti noodles, but it shreds into strands that look like noodles! Add in some spaghetti sauce and maybe even some meat, and you’ve got yourself a bowl of spaghetti – with fiber, manganese, and vitamins (C and B6) – and without the starchy noodles! Bonus: it’s gluten free – you’re welcome!

If you haven’t had spaghetti squash before, it’s definitely worth trying! Also worth trying – roasting the seeds! I have fond memories of roasting pumpkin seeds at Halloween, so I roasted the spaghetti squash seeds, and they turned out delicious! (If I may say so!) Check out how to roast them HERE!

DIRECTIONS

  1. Preheat oven to 400 degrees.
  2. Cut the squash in half length-wise.
  3. Scoop out the seeds and pulp.
  4. Put it on a baking sheet face down.
  5. Bake at 400 degrees for 30-45 minutes, until the outer shell can be pierced with a fork.
  6. Remove from the oven and let cool enough to handle.
  7. Use a fork to separate the ‘spaghetti’ strands.
  8. Serve with your favorite spaghetti toppings!

I top mine with my favorite spaghetti sauce and ground turkey! (Pictured above.) But leave off the turkey, and now your meal is vegan! Spaghetti squash is even so versatile, that you can make it into a sweet treat, too – something I plan to try next time I make it!
