Baked Apple Cider Donuts with Maple Sugar Glaze

I’ve had many people request the recipe to these baked Apple Cider donuts – so I’m happy to [finally] say – here it is!! These are the perfect amount of apple and maple, brought together in a soft, fluffy, tender donut.

You’ll definitely want to leave yourself some extra time for prepping these donuts, though. Part of the deal is putting 2 cups of apple cider on the stovetop and letting it reduce down to 1/2 cup. It takes a little while, but it is so worth it! It makes a more concentrated liquid for your donuts, which will amp up the flavor more than just using 1/2 cup of apple cider would. (I tried to get around this step, but in the end, it was necessary to achieve the right amount of apple flavor.)

The maple glaze just takes the donuts to another level. It brings a nice layer of sweetness without overpowering the apple flavor. And it makes me wonder why I don’t use maple in more of my baking!

While baking your own allergen free goodies can be stressful at times, it’s also super nice to have a treat without worrying about the risk of cross contamination from a bakery! After having a daughter with all of these allergies for over two years, I sometimes joke that I should start my own bakery! But for now, I’ll stick to just sharing my recipes with you! πŸ™‚

INGREDIENTS

Apple Cider Donuts

  • 2 cups apple cider (reduce on stove top to 1/2 cup)
  • 1 1/2 cups gluten free flour (1:1 blend)
  • 1/2 cup sugar
  • 1/3 cup applesauce
  • 2 teaspoons cinnamon
  • 1/2 teaspoon baking soda
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup dairy free milk (We use Silk Oat Yeah milk)
  • 2 tablespoons coconut oil – melted

Maple Sugar Glaze

  • 1 cup powdered sugar (if you’re corn free, make your own: see how to HERE.)
  • 2 tablespoons coconut oil – melted
  • 6 tablespoons maple syrup

DIRECTIONS

  1. Put the apple cider in a saucepan on the stove on medium-high heat. Reduce to 1/2 cup. (This will take a while, so allow extra time for this.)
  2. Preheat the oven to 350 degrees.
  3. In a large bowl, combine all of the dry ingredients – gluten free flour, sugar, cinnamon, baking soda, and salt.
  4. In another bowl, mix together the wet ingredients using a hand or stand mixer – reduced apple cider, applesauce, apple cider vinegar, vanilla extract, oat milk, and coconut oil.
  5. Mix wet and dry ingredients together until well combined.
  6. Spoon mixture into a ziplock or piping bag. Cut off the corner and pipe into lightly greased donut pans. (2 pans – makes 12 donut)
  7. Bake at 350 for 13 – 15 minutes, until the donuts spring back after a light finger touch.
  8. Remove from pan and cool on a wire rack.
  9. Make the glaze by combining all of the glaze ingredients in a bowl – powdered sugar, coconut oil, and maple syrup. Use a bowl big enough that you’ll be able to easily dip the donuts in.
  10. Dip each donut into the glaze and set on parchment or silicone pads for the glaze to harden.
  11. Once the glaze has set, serve and enjoy these yummy apple donuts!

These donuts were a hit at our son’s baptism! I only made one batch (12 donuts) because I wasn’t sure how they would go over – but I really should have made another batch! And now I keep looking for another excuse to make them. Because if I just make them for my family of four, I might end up eating half a dozen myself… πŸ™‚
